Breakfast Pizza Omelette For One#Fantastical Food Fight

This makes a wonderful breakfast! It's like having a flavor of pizza for breakfast with eggs which is gluten free and nutritious. 
A great recipe for when you're in a rush or you're too tired to cook dinner. It's filling and perfect!!
Serves One
Ingredients

2 Eggs
2 Tablespoons Finely Chopped Scallions
2 Tablespoons Capsicum - cut tiny cubes
2 Tablespoons Black Olives slices
1 Long Chicken Sausages - finely chopped
2 Tablespoons Tomato - de seeded and cut into cubes
2 Mushrooms - finely chopped
¾ Teaspoon Red Chilly Flakes
1 Teaspoon Oregano
¼ Cup Milk
¼ Teaspoon Salt
1 Tablespoon Oil
2 Tablespoons Parmesan Cheese

Method

Chop all the vegetables and chicken sausages, keep aside. 
In a large bowl add milk  and all the dry spices, give it a good mix then crack in the eggs and whisk till light and fluffy
Heat oil in a pan, put half beaten egg mixture, top evenly with veggies and sausages ,   then pour in the remaining egg mixture add the olives. 
Cover  the pan  for  a minute or two, when half cooked sprinkle Parmesan cheese. 
Cover, cook on low heat for 2 -3  minutes, cook until done. 
 Flip it for a minute only.  
Take it out on to a serving plates.
Serve with herbed butter toast.
Slice it and enjoy with toast.  Sumptuous breakfast!!

Brown Bread Omelette

Bread Omelet is a very popular street food. This makes a good and healthy breakfast or filling meal too. This is quick and easy to prepare. 
Ingredients 
4 Eggs
2 Medium Onions - finely chopped
Turmeric powder-1/2 tsp
2 Green Chillies -finely chopped or according to taste
2 Tablespoons  Coriander leaves - finely chopped
Salt to taste
Oil as required 
4 Brown Bread slices

Method

Toast the bread slices lightly and keep aside
Add the onions, turmeric, salt, green chillies and coriander leaves in a bowl, mix well. 

In a another bowl break an egg and whisk it lightly, add to it a tablespoon or two of the onion mixture and mix it all up.
Heat oil in a non stick frying pan, over medium flame. Pour a little of this egg mixture on the pan, in small circle 
place the toasted bread in the center, with a spatula fold the edges of the omelet around the bread on top of the bread 
again spread the egg mixture on top and let it cook it on low flame for 3 minutes,until the base of the omelet is lightly browned. 
Carefully flip over the omelet,press it down lightly with the spatula and cook this side too till done and browned. 
Remove this on to a plate and continue making omelets with rest of the mixture.
When done cut each slice into triangle drizzle tomato ketchup. Enjoy the yummy and delicious bread omelette!

Moroccan Tortilla / Tortilla Omelette

This recipe for Tortilla also called Moroccan Omelet, a Ramadan special dish. This recipe is delicious and so easy to make! 

Can be served as an appetizer,  for a filling and hearty breakfast  or for SuhÅ«r also known as Sehri ,  it's an Islamic term referring to the meal consumed early in the morning by Muslims before fasting / before dawn during or outside the Islamic month of Ramadan.
Serves 2
Ingredients
2 Medium Potatoes- boiled and sliced
2 Tablespoons Coriander Leaves - finely chopped
2 Large Eggs
1 Medium Onion - chopped
2 Teaspoons Oil
1/2 Teaspoon Salt or to taste
1/4 Teaspoon Black pepper
1/2 Teaspoon Paprika powder
1/4 Teaspoon Cumin Powder

Method 

Heat a teaspoon oil in a frying pan and add onions and saute till soft and just start to turn pink. Now add potatoes, all the spices and saute for a minute or two only. 
Add coriander leaves and transfer this into a bowl, keep it aside to cool.
In a separate bowl, beat the eggs till light and fluffy.
Add it to the potatoes mixture to it and mix it well.

Heat the same frying pan with the remaining oil and pour this mixture into the pan and level it by spreading it with a spatula. 
Cover with a lid.
Cook till the top is dry. 
To flip the tortilla take a plate and place it on top of the pan and flip it .. see pic so that it does not break and remains in one piece.
Now gently tilt the plate and transfer the top side on to the pan and again cover and cook for 2 minutes or until it is nice and brown.. 
After both side is done.
Transfer it to the serving plate.
Slice it.
Serve it hot, warm, cool, or at room temperature. !  Enjoy this yum and delicious Moroccan Tortilla.
