Eggless Vanilla Cookies


These cookies are so tasty that kids will enjoy them. As a child I loved cookies, pista biscuits,  my daughter too loves them. Whenever these are made, they  get over in two or three days.

Ingredients


125 Grams All purpose flour
1/4 Teaspoon Baking powder
1/8 Teaspoon Baking soda
 50 Grams Sugar powdered
50 Grams Unsalted Butter
1/2 Teaspoon Vanilla essence
3 -4 Teaspoons Milk

Method

Sieve the flour, baking powder and baking soda, keep aside

Cream the butter and sugar well till fluffy, add the essence and flour  and mix well till incorporated. Add a teaspoon of milk at a time and from a soft dough.   Roll the dough in a cling film and keep it in the refrigerator to chill for 10 minutes.

In the meantime preheat the oven at 150 degrees.

Divide this dough in equal size balls.  Roll each ball in a round shape.  Put a little tutti-frutti on top and bake for 12 - 15.  

Let it cool for 3-4 minutes in sheet then remove it on cooling rack and let it cool completely.

Serve with tea or coffee.  Kids will love this cookies as a after school snack or pack in their lunch box.

Sausage and Potato Mash Pie


This is an easy way to dish up sausages and if you like sausages. I had about 2 cups leftover mashed potatoes so this was even more quick and easy to prepare. This is very filling and a satisfying one pot meal, a welcome change from the regular roti sabzi. I made this for our dinner. I prepared 2 individual pies. You add any veggies of your choice too.

Ingredients
2 Cups Mashed potatoes

1/4 Cup Hot Milk 
1 Tablespoon Butter - I used salted
1/4 Cup Cheese - grated
8 Chicken and Cheese Sausages
1 Spring Onion - finely chopped
1 Tomato -  finely chopped
1 Teaspoon Mixed herbs
1/2 Teaspoon Red Chilly flakes
2 Tablespoons Fresh Bread crumbs


Method
Heat oven to 180 degrees. 

Spray 2 small size glass pie plates.

Mix potatoes, milk;  butter and cheese well. Keep aside 

Meanwhile, in pan, saute the onions till translucent, then add the tomato and sausage, stir fry for  2 minutes only.  Add the seasonings mix well and leave it to cool. 


Spread cooked sausage mixture in bottom of pie plate.



Cover with potatoe mixture forming a crust.  Sprinkle little mixed herbs. chilly flakes.



A tablespoon of breadcumbs on top and bake about 25 minutes or until crust edges just begin to turn golden brown.



If you want this more cheesy then sprinkle more cheese on the top ( this is did not add). Bake again for about 5 minutes or until cheese is melted. Let stand for 10 minutes before serving.  

Take your pie dish and enjoy eating it watching your favorite programme on television.

Roasted Sweet Potatoes Sticks with Italian Salad Dressing


Craving french fries?  Try these oven-roasted sweet-potato fries. A healthier way to satisfy those cravings, quick and easy to make, these warm and healthy fries are perfect comfort food and an awesome appetizer. A healthy way to prepare sweet potatoes is so simple: sliced and roasted. You just pop them in the oven and look at it after every 15 - 20 minutes that easy it is....


Ingredients

4 Medium Sweet potatoes
1/3 cup Italian Salad Dressing
1/2 Teaspoon Salt

Method

Peel and cut each sweet potatoe lengthwise into thick sticks.
Heat oven to 200 degrees. In a large bowl toss to liberally coat the sweet potato wedges with the salad dressing.


Arrange the potato wedges on pan in a single layer, without over-crowding. Bake for 45 minutes until tender. After about 20 minutes remove the tray and turn the side of the wedges and bake again till done.

Lamb Pepper Bake


This recipe I watch on a TV and for long time wanted to try this, but since only I eat red meat did not make this recipe.  Now since we are in the month of baking I got an opportunity to try this.  This was really delicious and a one pot meal, very filling.  I halved the recipe and made.  This is serves 3, as a filling  and complete meal.


Ingredients


500 Grams Lamb Meat - boneless - cut into small cubes
2 Tablespoon Coriander Leaves - finely chopped
15 Curry Leaves
1 Small Capsicum - cut into cubes
4 Green chillies - finely chopped

3 Large Tomatoes - pureed and strained
2 Tablespoon All Purpose Flour
1 Teaspoon Black pepper
1 Teaspoon Red Chilly Powder
1/2 Cup Cheddar Cheese grated (I used Gouda)
4 Tablespoons Fresh Bread crumbs
4 Cloves
2 Sticks Cinnamon
4 Green Cardamom
2 Eggs - beaten

Method


Heat oil in a pan , add cloves cinnamon, green cardamom, onion till soft and transparent.  Then add ginger garlic paste stir fry,  add the lamb cubes and fry for 4 minutes, add the tomatoes puree and fry on high flame till water slightly dries, then add salt, black pepper and garam masala,  add water for the  gravy. Let it cook for 5 minutes on low flame.  Mix the   all purpose flour mixed in water, then add the slurry little by little till thick ,  and lightly stir fry for a minute , take off the flame.


Grease a baking dish well then pour  the lamb mix 


Arrange the capsicum on top


Add lightly beaten cream.


Sprinkle the bread crumbs on top



 then beaten eggs.  Then top it with cheese grated.


In another pan take 2 tablespoon oil heat add curry leaves and pour over the cheese.



Cover with an aluminium foil and bake at 180 degrees for 20 to 25 minutes .  Then remove the foil and keep it on broil for 3 - 5 minutes  or till well browned on top and it starts leaving the sides.  Enjoy when cooled.

A Heart in a Cake - A Loaf Cake - Eggless Cake - A Valentine Special


This lovely Loaf cake has a secret: When you cut it open, you'll find that each slice has a heart inside. 

This cake is dedicated to all my trekking friends and feel so blessed to call them friends!




Let me also tell you about the failure of my first attempt of making this cake. The hearts became perfect, the loaf cake also looked perfect when baked but as soon as it was out of the oven it sat down. After it cooled down,  I sliced it the first half of the cake was soft and turned out perfect, but as I started slicing the remaining, this was wet. I had to throw this in the bin. But decided not to give up. I prepared this again and here is the result.  We trekking friends celebrate our Valentine day with this cake in the next week.  We were thrilled to see and eat this cake.

Ingredients

150 Grams Unsalted butter, - at room temperature
200 Grams Sugar powdered

225 Grams All-purpose flour
1/2 + 1/2 Teaspoon Vanilla / Strawberry Essence
1.1/2 Teaspoons Baking powder
3/4 Teaspoon Baking soda
¼ Teaspoon Salt
1.1/2 Cups Milk
Red food coloring - I used Beetroot Juice
Heart shape cutter or silicone molds

Method
Preheat oven to the temperature  to  170 degrees.
Sieve the flour, salt and baking powders thrice.  Keep aside.

Beat the butter and sugar till light and fluffy and add the essence and little flour and milk simultaneously till all the flour is incorporated. 



To make the heart, add red coloring/ beetroot juice and strawberry essence to the mix. Pour batter into a prepared loaf pan or mold. Bake the hearts took 12 to 15 minutes at 170 degrees.  Allow to cool completely.



When cooled unmold the hearts.  




Trim the top and bottom.



The next day I made the other half.
Grease and dust a loaf pan.


Pour little batter about 1/2 inch for the base and tap it well so that it spreads evenly on the base.




Place cake hearts in the middle of the prepared pan; point up, back-to-back touching each other.



Pour the batter first on the sides of the pan and tap it lightly so that all gaps are covered well.





Pour the remaining batter over the hearts and make sure that they are completely covered, tap it again, so that it evenly spreads.


  
Place it in the oven to bake for about 40 -45 minutes.



Remove from oven; allow to cool for 15-20 minutes in the pan on a cooling rack. Remove from pan and cool completely before slicing.




They're guaranteed to satisfy your sweet craving and brighten your day.




My Notes:


I made this into 2 parts of one part - made heart cupcake and  used strawberry essence with beetroot juice as color.
Heart Cupcakes - Makes 9 heart cupcakes.

If you have not used molds then place red color cake on a cutting board. Using the depth of the heart cookie cutter as a guide, cut the cake into slices the same thickness as the cookie cutter

The other half, made the next day to assemble the cake into a loaf pan used vanilla essence and no color.

The top will sit down a little when cooled, but do not worry, while slicing turn  it up side down and then cut.   This cake is so soft that as I was slicing it was crumbling.  Handle this cake with care because your heart is inside.
