Aloo Bhendi Fry - No Onion, Garlic & Tomato

Bhendi is also known as lady’s finger or okra. In South East Europe it is known as bamya/bamija. Aloo is potato in English. In this sabzi there is no onion, garlic and tomato, it's dry sabzi, goes well with chapatti or dal rice, quick and easy to make. Choose small tender bhendi for this recpie, small ones have less seeds.
Ingredients


2 Medium Aloo/Potatoes - cut into small cubes
250 Grams Small Tender Bhendi/Okra
1 Teaspoon Red Chilli Powder or to your spice level
1½ Teaspoons Coriander Powder
½ Teaspoon Turmeric Powder
1 Tablespoon Lemon Juice
½ Teaspoon Garam masala
A Sprig Curry Leaves
3 - 4 Tablespoons Oil
1 Teaspoon Mustard seeds
A Pinch Asafoetida
Salt to Taste

Method
Wash and pat dry the bhendi with a cloth. Chop off the top and tail, then, cut them in small pieces on a slant.
Peel and cut the potatoes in small cubes.
In a frying pan heat two tablespoons oil. Add the bhendi and keep stirring till the stickiness is gone. Cook till soft on medium low flame. 
When cook, remove them on to a plate.
In the same frying pan heat the remaining oil, add the mustard seeds when they crackle add the asafoetida and curry leaves, give it a good stir then add cut potatoes and fry till nice and crisp. Now add all the dry spices and fry well for about 2 minutes , add the bhend, lemon juice and salt mix well. Let this cook on medium low flame for 2 - 3 minutes, stirring in between. Making sure that it does’nt burn. Switch off the flame and serve. 
Enjoy this sabzi with dal rice or chapatti.

Laal Sabzi /Beetroot Sabzi#SundayFunday

This is a quick easy and delicious sabzi, a superfood veggie. I love to eat boiled beetroot.

Ingredients
250 Grams Beetroot - chopped
250 Grams Carrots - chopped
250 Grams Tomatoes
2 Medium Potatoes
1 Teaspoon Sea Salt or to taste
2 Teaspoons Red Chili Powder 
½ Teaspoon Turmeric powder
½ Teaspoon Roasted Cumin powder
1 Small Cinnamon Stick
2 - 3 Cloves
3 Big Cloves Garlic- minced
Coriander Leaves for garnishing
3 Tablespoons Oil

Method
Chop beetroot into small pieces and boil it till half done, then strain.
Cut the potatoes, tomatoes and carrots into small pieces.
Heat oil, add minced garlic cloves and cinnamon, fry for 2 minutes, then add all the vegetables together and fry well. Add the seasonings, and stir fry for a minute or till all the veggies get coated with the spices, add ¼ cup water, mix well. Cover with lid, cook on medium low flame for about 10 minutes or till the veggies are done, stirring after every 2 minutes. Switch off the flame when the veggies are cooked. Garnish with coriander leaves. 
Serve with hot with phulkas or rotis.

Tandoori Aloo Matar Sabzi - A Side Dish

This is a lovely recipe for vegetarians, vegan, its gluten free too. Tandoori Aloo Matar is midly spiced yet delicious and mouthwatering with homemade tandoori masala which is so colorful. You can add different seasonings to change the dish as well, a must try dish.

Ingredients

1½ Cup Fresh Green Peas - boiled
4 Potatoes - cut into medium size cubes
2 Onions - sliced
3 Tomatoes - chopped
2 Teaspoons Cumin seeds
4 Green chilles - chopped
1 Tablespoon Ginger
½ Teaspoon Amchur powder
1 Tablespoon Tandoori Masala - Homemade
½ Teaspoon Salt
1 Teaspoon Coriander powder
2 Tablespoons Coriander leaves - chopped
¼ Cup Oil
½ Teaspoon Red Chilly powder

Method
Heat oil add cumin seeds, sliced onion, fry till light golden add chopped ginger and tomatoes, fry for 5 minutes add coriander powder, chilly powder, amchur powder, salt and ¼ cup water, fry well add peas, potatoes, tandoori masala, cover and cook on low flame for 10 minutes till oil surfaces.  
Serve garnish with coriander leaves and slit green chillies. Enjoy!!

Drumsticks Sabzi

Scientific name Moringa oleifera, known popularly as drumstick tree, is an herbaceous plant grown for its nutritious greens, flowers, and mineral-rich pods. It is a well-recognized member in the Moringaceae family of trees and thought to be originated in the sub-Himalayan ranges of Indian subcontinent. The plant possesses horseradish-like root and, hence, known to the western world as horseradish tree. The seed pods are popular as murnga in Tamil, and malunggay in Philippines.

Health Benefits of Drumstick
Juice of Drum stick when mixed in milk and offered to children greatly helps by strengthening their bones as it is said to be a great source of Calcium. Also drumstick is said to be a great blood purifier.
Pregnant women should often eat drumsticks as it helps ease any kind of pre and post delivery complication.
Drumstick soup helps ease any kind of chest congestions, coughs and sore throats.
Inhaling steam of water in which drumsticks have been boiled helps ease asthma and other lung problem.
Finally drumstick juice greatly adds to the glow on one’s face. Make a mixture of drumstick and limejuice and dab it on your face. You will find your face glowing greatly.
The greens as well as pods also contain good amounts of many vital B-complex vitamins such as folates,vitamin-B6 (pyridoxine), thiamin (vitamin B-1), riboflavin, pantothenic acid, and niacin. Much of these vitamin functions as co-enzymes in carbohydrate, protein, and fat metabolism.

This sabzi is very tasty, try it and you will definitively love it. 
Ingredients
6 Drumsticks
2 Tablespoon oil or ghee
1 Medium Onion - sliced
A Sprig Curry Leaves
¼ Teaspoon Turmeric powder
1 Teaspoon Black Pepper powder
2 Tablespoons Coconut - coarsely ground
½ Teaspoon Pav Bhaji Masala
½ Teaspoon Sugar
Salt to taste


Method

Cut the drumsticks into 4 inch pieces and peel the green skin. Keep aside.

In a pan, heat ghee/oil and sauté onion over moderate heat till light pink then add curry leaves, turmeric powder, the drumsticks and mix well, add salt, sugar, black pepper, and ground coconut, stir well. Add little water cover with lid add water on top of the lid and cook. Stir in between, when cooked add the pav bhaji masala and serve hot. This sabzi can be eaten as a side dish with rice/dal, rotis, chapattis, etc.
