Blender Whole Orange Bundt Cake#SundayFunday


This is a quick and easy recipe to make with a whole orange, just put all the ingredients except the flour in the blender and blend them. A very quick recipe to prepare in no time.

Ingredients
1 Sweet Orange with skin - chop and remove the seeds
3 Eggs
80 ML Vegetable Oil
¾ Cup Granulated Sugar
250 Grams Self Raising Flour

Method
Add orange, eggs, sugar and vegetable oil into a blender jar and blend into a smooth mixture and pour it into a bowl.
Add flour into the mixture and mix everything together. You can use a spatula or a hand whisk. Do not over mix.
Pour the batter into the greased bundt pan. 
Bake in a preheated oven at 180ºC for 35 to 40 minutes or until a skewer inserted in the center comes out clean.
Remove from the oven.  
Then unmold it on to wire rack and cool completely.  
Slice and enjoy!

SOP Mocktail# Foodieextravaganza

SOP Mocktail! is a Pineapple, Orange, Strawberry Mocktail.
This is a fun drink that the family can enjoy, with all the nutrients and fiber . This is a thick mocktail, I have not strained it, taste awesome and filling. Have this instead of mid time snack and stay healthy. If strawberries are out of season you can omit it and use only strawberry crush. This is cooling summer drink.

Makes 2 Tall Glasses
Ingredients

2 Orange - I used Kinnow - peeled and sectioned
5 Thick Slices Fresh Pineapple - cubed
4 Strawberries - sliced - fresh or frozen
3 Tablespoons Strawberry Crush or Sugar as needed
Ice Cubes as required

Method
Peel the orange and separate the segments.
Remove the pineapple skin and cut in cubes.
Blend the ingredients in a food processor and serve chilled.

Caramel & Orange Cake Pudding Trifle#Foodie Extravaganza

Trifle easy , tasty, with layers of cake, vanilla pudding and caramel chilled to perfection, looks so beautiful and tempting!!
Ingredients
300 Grams Olive Oil Fresh Orange Cake
½ Cup Caramel Sauce
1 Cup Whipped Cream
1/2 Cup 
Homemade Ready Vanilla Pudding Mix
500 Ml Milk
1/2 Teaspoon Gelatin + 2 Tablespoons Water
Ingredients for Quick Caramel Sauce
30 Caramel Toffees  - break in small pieces 
100 Ml Fresh Cream
¼ Cup Milk
Method
For the Caramel Sauce In a sauce pan cook all the ingredients together till the toffees melts and forms a thick caramel sauce. Cool and use.
For the Vanilla Pudding
In a saucepan whisk the milk and pudding mix till it forms a smooth mix. Place it on medium low flame and stirring continuously, cook it till it becomes thick enough to coat the back of a spoon. Keep this aside. Dissolve the gelatin in water and cook it till melts (do not bring it to a boil).  Mix this with the pudding and whisk it well.
 To Assemble the Dessert 
Spread the cake in shot glasses or  in a Pyrex serving dish, drizzle a little simple sugar syrup on the cake 
drizzle the prepared caramel sauce
Now pour the prepared pudding let it set in the refrigerator. 
Then only drizzle a little of caramel sauce. 
Whisk cream till it starts to stiffen now add 2 tablespoons caramel sauce and whisk till stiff peaks form. 
Pipe the caramel cream on top.   Serve chilled.
Just waiting to dig into it.. irresistible isn't it!!

Olive Oil Fresh Orange Cake#Improv

This is an easy recipe fragrant, soft and fluffy tea cake flavored with freshly squeezed orange juice and orange zest.
Ingredients
1 Cup Caster Sugar
1/3 Cup Olive Oil
2 Eggs
¼ Teaspoon Vanilla essence
A Drop  of Orange Emulsion
1 Cup Fresh Juice of Navel Oranges
Zest of 1 Navel Orange
2 Cups Level All Purpose Flour
2 Teaspoons Baking powder
¼ Teaspoon Salt

Method

Beat first five ingredients in a large bowl, add orange juice and zest, stir until combined, mix in the flour, baking powder and salt, add to orange mixture, stir until just moistened, turn into greased pan. 
Bake in pre heated oven at 180°C for 45 mins, leave it in the pan for 10 mins before 
moving to the wire rack to cool and serve.
 Enjoy for tea!!

Cream of Onion And Orange Soup#SoupSwappers

This Cream of Onion And Orange Soup is so flavorful and so refreshing you will love it. The zest of the orange renders a beautiful aroma to this soup. Must try this.  

For Soup Swappers this month the theme is " Refreshing Fruit Soups" our host is April Tuell.

Ingredients
2 Tablespoons Butter
2 Medium Onion  - chopped
2 Medium Potatoes  -  sliced

½  Cup Cream
Cup Milk
3 Cups 
Water
1 Vegetable stock cube
A zest of One Orange
Salt to taste
Tablespoon Corn flour 
Method
Finely chop the onions, soak it  in water for 2 -3 minutes then wash it in fresh water to take out the strong flavor. Drain and keep aside.
In a pot add butter and when it melts, add the  onions in the pan and cook them for 3 - 4 minutes on low heat with pinch of salt.  Add water and  potatoes cool till the potatoes are done.   When done cool this mixture and then blend it in the  food processor , along with the milk  into a fine paste
 Return the mixture back to the pot and add a stock cube and cream, mix well.  Add the orange rind and cook for another 2 - 3 minutes.
Mix the corn flour in ¼ water, add to the soup, keep stirring it it comes to boil and thickens. 
Serve hot.. Enjoy this flavorful soup.

Eggless Orange Bundt With Orange Glaze#BundtBakers

This is soft and moist delicious cake.  Sent this for my Delhi family, they were very happy to receive an homemade Eggless delicious cake.
Ingredients 
1 Cup All Purpose Flour
½ Cup Caster Sugar
¼ Cup Thickened Orange juice - see method
¼ Cup Oil
½ Teaspoon Baking powder
½ Teaspoon Baking Soda
¼ Cup Yogurt
1 Teaspoon Orange zest
¼ Teaspoon Orange Essence
For The Glaze
½ Cup Orange juice
½ Cup Granulated Sugar
1 Tablespoon Orange zest - cut into thin strips

Method 

Take 1/2 cup fresh orange juice and place it on medium flame till it reduces to half by boiling or till it is only ¼ cup. Cool this completely, then only use it. 
Grease and dust a bundt pan with flour and keep aside.
 In a big bowl add the  yogurt and add the baking soda in it and stir well and Keep aside  for 5 minutes

In the meantime, sieve the all purpose flour and baking powder together. Then add the  orange zest mix this well into the flour and keep this aside

Now to the yogurt baking soda bowl, add the caster sugar and oil, orange essence and mix well.
Now dd the dry ingredients  with the reduced orange juice  make a smooth batter. 

Pour the batter in a greased bundt pan  and bake in a  preheat oven at 180 C for  for 30-35 minutes or till a toothpick inserted comes out clean.
Remove the cake from oven and let it stand for about 5 minutes. 
Then un-mould and cool it.
As the cake is cooling let's make the  Orange Glaze
In a sauce pan add the orange juice, sugar and  orange zest  strips and bring to boil. Cook till the syrup thickens and reduces to almost half.  It should be a  thick syrup with glaze like consistency.
Use a thin skewer or toothpick to poke holes in the top of the cake, then pour the warm s syrup all over the cake so that it soaks through.
Spread the thick glaze over the top of the cake. Add the orange strips also on top and leave to cool. 
Enjoy with a hot cuppa of tea ️ or coffee

Orange Chocolate Bundt Brownies #BundtBakers

These are such quick easy and delicious brownies. When the theme "Orange" Bundt Cakes, event for Bundt Bakers  by our host  Felice Geoghegan. This brownies came to my mind. Searched on line for a square bundt pan, could not find one. Gave up the idea of making this. Then one day while surfacing online found a site where they gave a tutorial how to make your own bundt pan.
I made this for our sangeet practice.  Used a square ring mold and sealed with 3 layers of  aluminium foil, placed a small turnover mold in the center, covered it with a aluminium foil and ta da my square bundt pan was ready to use.
These brownies vanished in a jiffy hot from the oven.
Ingredients

150 Grams Butter 

¾  Cup Chopped Chocolate
3 Eggs

1.1/4  Cup Caster sugar
Just 2 drops Orange essence 

1 Tablespoon Orange zest
100 Grams Flour
1 Teaspoon Baking powder 

½  Cup Orange juice 

Method
Mix all together in a bowl beat for 3 minutes, pour in a greased 8*8 inches square pan, line it and bake on 180 degrees for 25 minutes.  Cool, cut it and enjoy.
These are a divine treat, just be careful while adding orange essence since it is strong and if added more it gives a bitter taste.
