Eggless Keto Naan#BreadBakers

This is an easy eggless keto naan recipe that is flaky outside and soft on the inside. Tastes delicious with keto curries!

Makes 2 Naans
Ingredients

1⁄4 cup Shredded Mozzarella Cheese
1⁄3 Cup Packed Almond Flour
2 Teaspoons Fresh Unsweetened Yogurt
1⁄4 Teaspoon Salt
1⁄4 Teaspoon Baking powder
1⁄8 Teaspoon Garlic powder
For Garnish
Butter
Coriander leaves
Method
Preheat oven to 180°C.
Take a microwave safe bowl and add mozzarella cheese and yogurt. Heat in microwave oven till cheese melts (30 - 45 seconds) checking after 30 seconds.
Stir the melted cheese well.
In another bowl add almond flour, baking powder, salt and garlic powder, mix all these well. Then the almond flour mix to the the melted cheese and mix it well, till it combines into a dough. Knead the dough well with your hand.
Divide the dough into 2 balls.
Roll each dough into oval shape (6x4 inches).
You can fix any breaks in the rolled dough with your fingers.
Place the rolled out doughs into a parchment paper lined baking tray.
Bake for 10 minutes with both the elements on. Bake till brown spots appear on top. The naan should puff up a little.
Don’t bake too long if not the naan will turn stiff.
Slather butter onto the naan. (You can also add crushed garlic to the butter if you want). Sprinkle with chopped coriander leaves.

Bread Pizza Margarita#Foodieextravaganza

Quick and Easy Slice Bread Slice Margherita Pizza is probably one of the easiest recipes you can make for breakfast, a light and quick dinner or as a evening snack. Made these bread pizzas for the physically challenged children who I, spend time with pretty often. They were so thrilled to make these. In batches of 4 each , each batch was given do one task. One batch applies the butter, the other sauce, the next will grate the cheese on it and then last batch of children will garnish arrange the olives.
When these were ready and each one was served in a paper plate along with a glass of juice, they were so thrilled to eat what they had made. Seeing the smiling and joyful faces, taking a second and third helping, gives me immense satisfaction, joy, to be and spend time with them.
Here the recipe is of a small quantity, but for 30 children I, made in large quantity.. used three medium packs of brown bread, 650 grams of pizza sauce and nearly a kg of mozzarella / pizza cheese and pics are of all the remaining that I could take. I am sure these mini bread pizzas, will be loved by you, especially the kids.  
If you are craving for pizza and don't have time to prepare the dough and then this is best solution. Easy, quick and really, really delicious. It takes no more than 15 or 20 minutes, you can also choose your favorite pizza toppings or with, ingredients you have in house. Can make many other variations according to your tastes and it's done, ready to be served.  
The recipe here is one simple option You can add various vegetables like peppers, onion, garlic, olives or meat like ham, prosciutto, tuna, pepperoni even other type of cheese. You can never get bored with this dish.
Give it a try I am sure you and your kids will love these. The 
Ingredients
6 Bread slices
1/3 to 1/2 Cup Pizza Sauce
1/2 Cup Mozzarella Cheese - grated
1 Teaspoon Dried Oregano
5-6 fresh basil leaves, chopped
Sliced Green or Black Olives - as required

Method
Preheat oven to 200°C with both the elements on.
Butter both the sides of the bread lightly. Arrange bread slices on a baking tray lined with parchment paper.
Spread pizza sauce on each slice of bread. Sprinkle dry oregano, and grated cheese. Top it with sliced black or green olives and chopped basil leaves (by the time I could make these for pics all the olives were over).
Bake for 10 minutes or until the cheese melts. Serve immediately.

Copy Cat Domino's Zingy Paneer Parcels#BreadBakers

Zingy parcel is the most wanted side dishes especially by the kids from the time it made its entry in the menu of Dominoes. It is zingy, tasty, spicy puffed pastry which is filled with delicious paneer filling and seasons with lots of pizza seasonings. It’s basically the Indian version of the Italian pizza just its shape is like a pocket with yum fillings. 

I have already made Harissa Paste  and it has mayonnaise to give it the creamy texture.

Makes 8 Parcels
Ingredients
For the Bread Dough
120Ml+ Warm Water
2 Teaspoons Sugar
1 Teaspoon Instant Yeast
200 Grams All Purpose Flour
1½ Tablespoon Milk Powder
½ Teaspoon Garlic Powder
1 Teaspoon Salt
2 Teaspoons Olive Oil
For The Creamy Harissa Sauce
3 Tablespoons Harissa Paste
1/3 Cup Mayonnaise
For The Masala Paneer
100g Paneer - cut into  tiny cubes
¼ Teaspoon Turmeric Powder,
¼ Teaspoon Red Chilly Powder
¼ Teaspoon Garam Masala,
¼ Teaspoon Salt
¼ Teaspoon Kasuri Methi,
¼ Teaspoon Ginger Garlic Paste
½ Teaspoon Garlic Butter - for brushing
50 Grams Mozzarella Cheese
Cornmeal flour for dusting the work surface
Pizza Seasoning & Chilly Flakes - optional
Method
Take a medium bowl. Pour little lukewarm water, add salt, sugar, yeast. Mix well and keep it aside for 5 minutes. Now, add flour, garlic powder and knead the dough nicely. Adding little water at a time to make a soft dough. Take this on to a work surface and knead it well till forms a smooth and soft dough
Place it oil in a greased bowl and keep it covered with a cling wrap till it doubles in volume.
Let's Prepare The Stuffing
In a bowl add the paneer and all the spices, oil and give it a mix. Marinate it for an hour. 
After an hour take a non stick pan place in it on high flame and cook for 2 -3 minutes.

For The Creamy Harissa Sauce
Combine the harissa paste with the mayonnaise and mix well.
Creamy Harissa Sauce is ready. 
To Make The Zingy Parcel
Once the dough has risen. Take it on to a dusted work surface  and flatten it with your hand, Now roll it into a circle, about ¼ thick. 
Cut it into 8 equal triangles. 
Take one triangle and stretch the two ends a little. Then place just a level teaspoon of creamy harissa sauce ( not more than that or else while baking the sauce will leak out) and spread it a little
place cubes of paneer, a teaspoon of mozzarella cheese. Brush all the ends of the triangle with water.
First pinch both the end of the triangle and
the third end to make a parcel. Like wise make all and place them on a greased baking tray.
Brush them with melted garlic butter. Don’t brush on the sides. Cover it with a damp cloth and let them rise for 15 - 20 minutes.
Bake them in a preheated oven at 200°C for 12 minutes then change the sides of the tray and bake it again for 5 - 7 minutes till they are golden on top. As soon as they are out of the oven brush them with melted garlic butter and sprinkle pizza seasonings and chili flakes.       
                            
 Take them out on to the wire rack to cool. 
Enjoy these super soft Zingy Parcels...yum yum.
These went to my sister in law's house for the rosary, these are for the vegetarians. Do try, these went like hot cakes.

Spinach Spaghetti Bundt#BundtBakers

Made this  as an appetizer for the Mehndi dance practice. It's so quick and easy, just mix all the ingredients and ta da .. bake it.

Ingredients  

1/2 Packet Spaghetti boiled
2 Cups Spinach - finally chopped
2 Tomatoes - de seeded cut into cubes
11/2 Cup Grated Cheese - Mozzarella and Cheddar Cheese
4 Eggs
2 Tablespoons Corn flour
600 ML Fresh Cream
1 Teaspoon Salt
1 Teaspoon Black pepper
1 Teaspoon Chilly flakes
1 Teaspoon Mixed herbs

Method

Boil the spaghetti as per the packet instructions.
In a large bowl beat eggs ,add in 1 cup of the cheese, corn flour, cream, salt, black pepper and chilly flakes, mixed herbs, beat all these very well,
Spinach, tomato cubes, 
fold it well till all are nicely lastly incorporated, 
then fold in boiled spaghetti.
Grease a ring bundt pan well with butter.
Pour this into the greased your 10 inch bundt ring pan with oil on all sides and top with remaining 1/2 cup grated cheese
 bake in a pre heated oven for 30-35 min at 180 degree.
 When cooled lightly 
then un mold it into a serving platter. 
Slice and serve..enjoy
My Notes
Can  add any veggies of your choice, sweet corn, broccoli or mushrooms, bell peppers, scallions etc. 
You can also use fresh herbs.
