Keto Vegetarian Eggplant Rollatini

This Eggplant Rollatini recipe is a twist on a traditional Eggplant Parmesan and this is a vegetarian version. “Rollatini” is an Americanized version of the Italian word “involtini,” which describes small bundles of food made by rolling thin slices of meat or produce around a filling. 
Here I, have pan fried eggplant slices instead of deep frying. For the sauce have used my Keto Homemade Roasted Tomato Sauce. While this was baking in the oven great aroma of all deliciousness filled my kitchen. Try this and you will love it. This recipe works great as a vegetarian side for potluck & parties.
Serves - 4
Ingredients

2 Large Eggplants/Brinjals
1 Tablespoon Olive Oil
½ Cup Keto Roasted Tomato Sauce
1 Medium Red Onion
2 Clove Garlic - Minced
2 Tablespoons Coriander or Basil Leaves - chopped
Salt & Red Pepper Flakes - to taste
½ Cup Homemade Basil Pesto 
½ Cup Greek Yogurt / Hung Curd
100 Grams Feta Cheese
1/3 Cup Pizza Cheese
1 Tablespoon Chopped Coriander / Basil Leaves - for garnish
Method
For The Sauce
Heat olive oil in a pan. Saute chopped onion, minced garlic until translucent. Add roasted tomato sauce, salt, red pepper flakes and cook until the sauce thickens.
Prepare The Eggplants
Trim off the ends of the eggplants. Slice them lengthwise into ¼ inch slices. Salt the eggplant slices generously and place them in a colander. Set aside for 20 minutes to draw moisture out of the eggplant.
Then rinse off the slices in water and pat them dry using paper towels.
Brush the slices with olive oil on both sides. Heat a griddle and roast the eggplants for about 5 minutes per side until browned. 
Set aside and allow to cool.
For The Stuffing
In a bowl, combine thick basil pesto, greek yogurt and feta cheese. Mix well and season to taste.
Place the pesto mixture on the broader side of an eggplant slice (about a teaspoon of the filling), gently roll it away from you and place it in the baking try with seam side facing down.
Continue with the remaining eggplant slices.
Preheat oven to 180°C.
To Assemble
Spread the sauce on the bottom of a baking dish. 
Arrange all the rolled eggplants.
Again spread a layer of tomato sauce.
Sprinkle with pizza cheese on top and basil leaves. Cover with foil, and bake for 20 minutes. Remove foil and bake another 10 minutes or until the sauce is bubbly and cheese is golden brown. 
Remove from the oven.
Garnish with chopped cilantro and serve.
The combination of flavors and textures is fantastic. The filling offers a bright, creamy contrast to the silky eggplant, and the pesto adds delicious taste.  Enjoy! 
My Notes
Instead of greek yogurt you can use extra-firm tofu or paneer/cottage cheese.

Plachinda (Moldovan Breads With Cheese & Leafy Greens)#EatTheWorld

Plachinda is a round flat bread that is commonly stuffed with cheese. This flatbread is a stuffed bread what we call here in India a paratha. In this flatbread no yeast is used instead it is leavened with baking soda or baking powder. I have seen so many recipes on the internet some make it round and some make like a turnover. I have watched YouTube video's and decide to adapt one with which I can get ingredients readily available here. Most of the recipes use sorrel leaves as one of the ingredients and kefir to make this stuffed flatbread. But I couldn't find it in market as this is not the season for this leafy green here instead went with spinach and used buttermilk instead of kefir to make the dough.
Also subbed the all purpose flour with little freshly milled whole wheat flour to make it healthy.
Makes 4
Ingredients
For The Dough

1 Cup Kefir / Buttermilk
½ Tablespoon Olive oil
½ Tablespoon Caster Sugar
½ Teaspoon Pink Himalayan Salt
250 Grams All Purpose flour, plus extra for dusting
100 Grams Whole Wheat Flour
½ Teaspoon Baking Soda
½ Teaspoon Baking powder
For The Filling
200 Grams Feta cheese - crumbled
200 Grams Homemade Cottage Cheese / Paneer - crumbled
50 Grams Sorrel or Spinach leaves - finely chopped
4 Spring Onions / Scallions - finely chopped
2 Tablespoons Dill Leaves - finely chopped
½ Teaspoon Black pepper powder
¼ Cup Olive Oil - for frying
To Fry
¼ Cup Olive Oil
Method
For The Dough 
In a large kneading bowl add in ¾ cup buttermilk, oil, sugar and salt in a large bowl and mix together well with a fork.
Sift the flour with the baking powder & baking soda, then sift again into the buttermilk mixture and mix in start to incorporating to make a soft and smooth. If it’s still slightly sticky, incorporating more flour into it & if it is stiff then add the remaining buttermilk a little at a time to make a nice soft smooth dough. Take this on to lightly floured work surface and start to knead the dough till it should stop sticking to your hands and forms a soft smooth dough. Cover the dough and let it rest for 20 minutes.
In the meantime Let's Make The Filling
Mix the feta, cottage cheese spinach, spring onions and dill together, making sure that the feta is finely crumbled. Divide this into 4 parts.
Divide the dough into 4 part. Flour the work surface really well and roll out each piece of dough, one by one, into a 20 cm (8 inch) diameter circle.
Moisten the surface of one dough circle with your finger tips with a little bit of oil and place one part of the filling on the center of the circle.
Next, take edges of the circle and fold it into the middle ( like a moneybag) pinching them to the top well. 
Then flatten it in the center. The dough should resemble a flattened moneybag.
Now flour the top lightly and gently flatten it with the rolling pin flouring the work surface till it form a thick circle 6" - 8" circle. The filling will be breaking at the edges but no worries this flatbread does taste so good.
Repeat the process with the remaining dough and filling.
Heat the a tablespoon of oil in a frying pan on medium low flame until hot and gently lower in each flatbread, one at a time. Fry for 2–2½ minutes on each side.
Enjoy these with ketchup!

Warm Chicken & Mushroom Salad - Keto#SundayFunday

A complete meal with added chicken, feta cheese, and seeds makes u this luxurious main dish. Do try this unique and really tasty salad!
Ingredients
3 Large Mushroom - sliced
1 Small Onion sliced
½ Each Bell Pepper - Red, Yellow, Green- diced
2 Cloves Garlic - finely chopped
1 Cup Chopped Lettuce
1 Cup Cherry Tomatoes - halved
100 Grams Feta cheese - cubed
Olives, Avocado, sunflower & pumpkin seeds- optional
1/2 Cup Shredded Cooked Chicken
1 Tablespoon Olive Oil
For The Dressing
2 Tablespoons Mayonnaise
2 Tablespoons Fresh Cream
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Red Wine Vinegar
2 Teaspoons Sriracha Sauce
Salt and Pepper to taste
Method
Mix all dressing ingredients keep aside.
Sauté the garlic for minute add onion till translucent then add in the mushroom and on medium high flame sauté till all the moisture evaporates then add the capsicum and chicken mix well till warmed. Switch off the flame.
Take this on to a serving platter add the lettuce leaves. Pour the dressing mix well. Enjoy.

Baked Feta Pasta (Viral TikTok Recipe)#BakingBloggers

This dish is made pasta with cherry tomatoes, lots of basil and feta cheese , when baked is creamy, delicious. This pasta recipe has taken the culinary world by a storm! It's so easy to put together and is the perfect dish for weekend dinners and the whole thing is done in about 45 minutes with not much of chopping and washing of many dishes!
I wanted to make this recipe for a long time, but, some how because of too many restrictions on timings of stores being kept open, it's not easy to get many ingredients.

Serves 3 as a complete meal
Ingredients 

500 Grams Cherry Tomatoes
1 Small Onion - sliced
3 Big Garlic Cloves - finely chopped
½ Cup Olive Oil
¼ Teaspoon Sea Salt
¼ Teaspoon Freshly Ground Black Pepper
¼ Teaspoon Italian Seasoning
1/4 Teaspoon Red Chilly Flakes
200 Grams Feta Cheese
225 Grams Dried Pasta - of your choice
A handful of basil leaves- cut into chiffonades

Method
Place cherry tomatoes, onion, and garlic cloves in a baking Pyrex dish in a single layer. Drizzle 1/3 cup of olive oil on it.
Season with sea salt, black pepper, chilly flakes, fresh basil chiffonades and Italian seasoning, give it a good mix.
Make some space in the center of the dish, place the block of feta cheese, drizzle the remaining olive oil on it. Cover the dish with a foil and bake in the preheated oven 180°C for 35 minutes, you will see the tomatoes are bursting and bubbling.
While the dish is baking, let's boil the pasta as per the package instructions . Drain, reserve about a ¼ cup of the starchy pasta water, if needed later ( I did not use it).
After 35 minutes, remove the baking dish from the oven.
The tomatoes would have burst open and the cheese should be soft and melty. 
Mash the cheese and tomatoes with the help of a fork or spatula, then mix everything together. 
Add the cooked pasta and roughly torn basil leaves.
Toss gently until the pasta is evenly coated with the creamy sauce.
It 's creamy and cheesy comfort food.

Cherry Tomatoes & Lentil Feta Cheese Salad

This is a healthy salad, packed with proteins and fiber.  A great and delicious summer salad that is vibrant in color, crunchy and tangy. This is my hubby's favorite salad.   I made a bowl full for us for  dinner, but he asked me prepare another helping for him again.  He loves this salad.  You too try it may become your favorite, because it so simple, easy and filling too.
Ingredients
12 -15 Cherry Tomatoes - halved
1 Cup Boiled Sabut Masoor Dal / Brown lentils
1 Red onion - thinly sliced
100 Grams Feta Cheese or more according to your liking
1 Tablespoon Chopped Coriander Or Parsley Leaves
10 -12 Basil leaves - torn
A Pinch of Sugar
Salt and Black Pepper to taste
For the Dressing - mix together
1 Tablespoon Olive oil
1 Tablespoon Balsamic Vinegar
Method

Slice the tomatoes In a large  mixing  bowl add the cherry tomatoes, lentils, onion,  coriander and  basil leaves  and season with salt, pepper and dressing (olive oil and balsamic vinegar) mix well then
 crumble the feta over it.
Serve.

My Notes

Feel free to add more tomatoes or lentils or feta cheese if you are making a bigger salad.
