Lemon Rice/Chitranna#Alphabet Challenge

Chitranna in Kannada is also known as lemon rice. It's a rice-based dish widely prepared in South India. Lemon rice is one of the most popular South Indian rice recipes. It is a real comfort food. Quick and easy to make with all ingredients in your pantry. This can be made with leftover cooked rice, is a crunchy, flavorful, tasty and tangy dish that is easy to make and tastes so good. 
Lemon juice, fried nuts and spices combine perfectly to give this steamed rice an amazing spicy, tangy and nutty flavor. The nuts add a crunch for the perfect rice dish texture. This vegan lemon rice recipe is sure to become one of your favorite rice dishes and gets ready in just 10 minutes.
1 Cup = 200 Ml
Serves Two
Ingredients
¾ Cup Rice 
3 - 4 Tablespoon Oil
A pinch Asafoetida
1 Teaspoon Mustard seeds
2 Sprig Curry leaves
3 Whole Dried Red chillies
1 Teaspoon Level Turmeric powder
2 Tablespoons Lemon juice or to taste
3 Tablespoons Raw Peanuts
1 Teaspoon Urad dal
1 Teaspoon Chana dal
½ Teaspoon Grated Ginger - optional
Salt to taste

Method
Wash and cook the rice with salt till done, do not over cook it. Drain and let it cool completely.
Heat oil in a wok / kadai, add mustard seeds and chana dal and urad dal let it mustard seeds splutter and the dals start to brown. Immediately add asafoetida, curry leaves, ginger, red chilli and peanuts. Saute them well till the peanuts turn dark brown. Then add turmeric powder followed by rice. 
Turn around a few times so the rice is completely mixed and is warmed. Add salt and lemon juice to the rice and mix well.
Serve hot. Enjoy with Chutney, raita and papad.

Chatpata Leftover Rice Paratha#SundayFunday

Leftover food  is  a regular affair in every household. Of all those leftover food, rice is one of the most common leftover food. So what do you do with that leftover rice?  Yes!! you can reheat the leftover rice  which can easily be consumed in the next meal as it is.  
But, transforming the same leftover  food   into something interesting and delicious, by adding some basic ingredients  that can be enjoyed/relished by all and is different.  So here I have combined the leftover rice with whole wheat flour, spices and made a chatpata and delicious paratha out of it for a wholesome breakfast or main course meal.  

Ingredients 
2 Cups Leftover Boiled Rice 
1½ Cups Whole Wheat Flour 
½ Teaspoon Red Chilly Powder 
¼ Teaspoon Turmeric Powder 
1 Teaspoon Coriander Powder 
½ Teaspoon Cumin Powder  
½ Teaspoon Salt 
½ Teaspoon Chat Masala 
1 Tablespoon Coriander Leaves
For Frying 
Oil + ghee - as required

Method
Reheat the rice in the microwave by sprinkling some water over it for 2 minutes on high power.
In a large bowl take the leftover rice , wheat flour and mash it it well as you are combining both. Now add in rest of the ingredients and knead a soft dough add just little water for kneading to make a soft dough. Cover the dough with damp cloth and rest it for 10-15 minutes.
Make small balls out of the dough. Dust the work surface with flour and roll them gently using rolling pin to make round paratha. Keep the aside, covered with a damp cloth.
Heat a tawa/griddle on medium low flame, when hot place the paratha and let is cook for 2 minutes. Flip it the paratha and increase the flame to medium high and spread ghee or oil and on top and the sides, when one side is cooked again flip and cook until the paratha turns golden brown when it gets cooked. See that both the sides are cooked well.
It's soft and moist, serve hot with pickle and yogurt.  Do try this recipe with the leftover rice you have in the refrigerator and Enjoy!

Chocolate Kheer#Choctoberfest

When leftovers than what do you? Rack your brains to use it, that's what I did with leftover rice made this delicious kheer with milk chocolate. 
A quick and easy dessert.

Ingredients  

1 Cup Leftover Cooked Rice
500 ML Full Cream Milk
3 Teaspoons Level Sugar
2 Mini Milky Chocolate Bars - chopped
For Garnishing 
A few nuts and raisins of your choice
Grated Chocolate

Method
Boil the milk, then add the cooked rice, when the milk thickens a little,  then add the sugar. When the sugar melts, reduce the flame to medium low, let it simmer for 5 minutes, keep stirring after a minute. Take off flame. Add the milk chocolate pieces, nuts and raisins. Pour into small khullads/baked clay pots. Garnish with grated chocolate, chopped nuts and raisins. Chill this in the refrigerator. 
Enjoys this cold, makes a perfect dessert if you have surprised guests.

Baked Creamy Rice Pudding With Peaches For Two#BakingBloggers

When my hubby is not well, then he eats, healthy and oil or butter free food and he is not a lover of fruits.  Made this healthy, gluten and butter free yet delicious fresh peaches filled pudding with toasted almonds on top for him.  
For this recipe you can use leftover rice  and canned peaches  to make it, but, I made it with freshly cooked rice and peaches.
He relished this for his lunch and dinner with a glass of milk.  This is real comfort food, satisfying and filling.

This month theme of Baking Bloggers is Baking with Peaches and Nectarines.


Serves 2

Ingredients
1 Large Egg
3/4 Cup Whole Milk
3 Tablespoons Packed Brown sugar 
¼ Teaspoon Salt 
¼ Teaspoon Cinnamon  powder
½ Teaspoon Vanilla essence
1 Teaspoon Lemon zest
1 Big  Peaches - diced 

¼  Cup Toasted Almonds -sliced
1/3 Cup Rice - boiled (made 1 Cup packed cooked rice)

Method

Preheat oven to 170 degrees C. 
Lightly butter a small Pyrex dish. In a large bowl, whisk together the egg, milk, sugar, salt, cinnamon, vanilla and lemon zest. Stir in the peaches, toasted almonds and cooked rice. 
Pour into prepared baking dish. Top it with some more sliced toasted almonds. 
Bake over water bath ( bain marie (ban mah-ree, is the fancy term for a hot water bath) and  bake for 55 minutes,
 until lightly browned and set. 
Cool slightly and Enjoy.

Gajrela - Kashmir


Gajrela is one of the most eaten dessert in winters or even throughout the year. It is one of the famous dessert recipe of Kashmiri cuisine. This recipe is Kheer that is made with carrot. This has a creamy and delicious taste. My hubby loved this dessert.

Ingredients


250 Grams Carrots - grated
500 ML Full Cream Milk
200 ML Condensed Milk
100 Grams Mawa / Khoya
1/2 Malai or Fresh Cream - I used malai
1/2 Cup Cooked Rice
2 Tablespoons Finely Chopped Almonds
1/4 Cup Sugar
1/4 Teaspoon Cardamom powder
2 Tablespoons Almonds powder


Method
Heat the milk and bring it to a boil, then add the cooked rice and add grated carrots. Cook on low flame till the carrots are cooked. Add sugar, cook it on the low flame till the sugar melts. Now add the condensed milk and khoya, almonds powder and cardamom powder. Mix well and cook for a few minutes and turn off the the flame. Add malai or cream and sprinkle finely chopped almonds,cool and serve it. Enjoy....

Baked Cheesy Capsicum


Capsicums are perfect for stuffing.   Easy stuffed peppers that are quick to make and very filling. This is also a great way to use leftover rice! My husband usually does not like capsicum, but when I served him this in lunch plate he enjoyed eating it and said they are tasty and good. Sad!  men do know to praise their wives until asked ....I gave a twist to this filling added cheese to it. The tomato and mint flavored rice along with cheese gives an awesome taste to the capsicums. Stuffed Peppers are a hearty and filling dish.

Ingredients

3 Capsicums
1 Teaspoon Cumin seeds
1 Onion- finely chopped
2 Tomatoes - finely chopped
1 Teaspoon Chilly flakes
1/2 Teaspoon Ginger- finely chopped
2 Garlic - finely chopped
1 Bay leaves
1/2 Teaspoon Dry Mint powder
2 Tablespoon Coriander leaves - finely chopped
1 Cup Cooked Rice
2 Teaspoons Olive Oil
Salt-to taste
1/2 Teaspoon Oregano
1/4 Cup Cheese or more as per your taste - grated


Method 


Heat oil in a pan add cumin seeds, onion, garlic, ginger, and bay leaves and saute till onions are light brown.
Then add the chopped tomatoes and fry till they become soft(for just 10 minutes). Add the rice,  mint,chilly flakes, oregano, salt and fry for 5 minutes. Take off the flame.

Then add  coriander leaves and cheese.

Cut the top of the capsicum and remove the seeds inside. Brush the inside with salted butter. 

Take the bell peppers and stuff it with rice filling .  Cover with a foil and bake them in a preheat oven at 150 degrees for 15 minutes.  In between rotate the tray for even baking.  After 15 minutes if you find the capsicums are soft remove them from the oven  sprinkle grated cheese and oregano.  Put them in the oven again uncovered till the cheese melts for about 5 minutes.


 Remove it from the oven and serve hot Enjoy .......
