Veg Chessy Beer Soup For Two#Soupswappers

When Kathy Altman gave us Carft Beer for this month theme my first reaction was yuck! Beer in a soup! Since I, am not a beer drinker, so as to say hate the smell and taste of it. But since this theme was given decided to try using it in the soup.
 After the soup was made and I had it .. it was delicious. Thanks to this group who pushes me try different recipes.

Cheesy Veg beer soup is the perfect comfort soup for grown-ups! No Not all you can even serve this to your adult kids since most alcohol, burns off during cooking and there will be vague beer tang that adds an oomph and flavor to the soup. Absolutely delicious, a must try recipe

Serves Two
Ingredients

1/2 Cup Macaroni - optional
1 Tablespoon Salted Butter
1 Tablespoon All Purpose Flour
1 Cup Milk
3 Tablespoons Shredded Cheddar cheese - or to taste
500 ML Water
1 Small Veg Stock Cube
1 Small Carrot - chopped
1/4 Cup Sprouted Fresh Green Peas
1 Scallion / Spring Onion
2 Cloves Garlic - chopped
1 Teaspoon Heaped Hot & Sweet Sauce
1 Teaspoon Red Chilly Garlic Sauce or to your taste
2 Teaspoons Sugar
2o0 ML Beer
1 Teaspoon Oil
1 Tablespoon Each Chopped Red, Green & Yellow Bell peppers
Method
Boil the pasta according to package directions, till al dente. Drain, and set aside.
Chop the the white and green part of scallion and keep them separately.
Heat oil in a large sauce pan, add the garlic and saute for a minute or till it releases an aroma, add the white part of the scallion and saute for a minute add the carrot and peas, saute till for a minute only, add the water and stock cube and let it come to a rolling boil. 
Increase heat to medium-high, and add the beer and bring all to a low boil. Reduce heat to medium-low, and simmer for 15 minutes. Now add the bell pepper, all the sauces, sugar and taste for flavors add more sauces according to your taste if required ( for us the quantity was perfect), stir it well and bring it to a boil.
In the meantime, in a another pan let's make the Bechamel Cheese sauce as per this method. When the sauce is ready add the cheese stir it well till it melts, keep aside.

To finish the soup
Pour the cheese sauce into the soup and stir until thickened. Add the drained pasta. Serve immediately and enjoy!!

Spinach Spaghetti Bundt#BundtBakers

Made this  as an appetizer for the Mehndi dance practice. It's so quick and easy, just mix all the ingredients and ta da .. bake it.

Ingredients  

1/2 Packet Spaghetti boiled
2 Cups Spinach - finally chopped
2 Tomatoes - de seeded cut into cubes
11/2 Cup Grated Cheese - Mozzarella and Cheddar Cheese
4 Eggs
2 Tablespoons Corn flour
600 ML Fresh Cream
1 Teaspoon Salt
1 Teaspoon Black pepper
1 Teaspoon Chilly flakes
1 Teaspoon Mixed herbs

Method

Boil the spaghetti as per the packet instructions.
In a large bowl beat eggs ,add in 1 cup of the cheese, corn flour, cream, salt, black pepper and chilly flakes, mixed herbs, beat all these very well,
Spinach, tomato cubes, 
fold it well till all are nicely lastly incorporated, 
then fold in boiled spaghetti.
Grease a ring bundt pan well with butter.
Pour this into the greased your 10 inch bundt ring pan with oil on all sides and top with remaining 1/2 cup grated cheese
 bake in a pre heated oven for 30-35 min at 180 degree.
 When cooled lightly 
then un mold it into a serving platter. 
Slice and serve..enjoy
My Notes
Can  add any veggies of your choice, sweet corn, broccoli or mushrooms, bell peppers, scallions etc. 
You can also use fresh herbs.

Mango China Grass Pudding / Mango Agar Agar Pudding

Mango agar agar pudding is a quick and esay to make. Agar agar or china grass beautifully sets the pudding so well that you cut slices and serve to your guest. 
This is a pure vegetarian creamy and luscious no bake dessert. Perfect for the summer since the king of fruit is also in season. You can use any variety mango, here I,have used Alphonso mango, my hubby's favorite. 

Ingredients 
1o Grams Flavourless China Grass Strands
A Liter of Milk
6 - 7 Tablespoons Sugar or as per your taste
2 Medium Mangoes - cut in to big pieces
1 Teaspoon Cardamom powder

Method
In a pan cut china grass into small pieces, soak it in 1/4 cup water . Keep this aside for 15 minutes. 
Now boil milk on medium flame add sugar and cardamom powder mix and stir till the sugar melts and it comes to a boil. Take off flame .

Cook the china grass on medium low flame till it melts. Add this to the boiled milk and stir it well. Strain this mixture into a setting/serving bowl, when it is still little warm add mango pieces. 
Let it come to room temperature cling wrap, keep in refrigerator to chill.
When you want to serve overturn it into a plate.
Turn it to right side.
Slice it and enjoy this creamy and luscious no bake dessert.
My Notes
Since the china grass sets at room temp, it does not require refrigeration for setting.  So, add mango pieces when still warm.

Kali Dal /Beluga Lentils#EarthDay

This Dal is known as Beluga lentils or  black lentils in English.
Made this dal for lunch with a twist. Tasted awesome and delicious.  This requires patience to cook and saute it on low flame.  If you have a slow cooker then use it to  make this dal. 


Ingredients
1/2 Cup Sabut Urad Dal/Beluga Lentils
1/2 Cup Red Rajma Beans/Kidney Beans
2 Medium Onions - finely chopped
3 Tablespoons Tomato puree
2 Inch Piece of Ginger  - finely chopped

5 Cloves Garlic - finely chopped
1/4  Teaspoon Turmeric powder
1 Teaspoon Coriander powder
1 Teaspoon Red Chilly powder
1 Teaspoon Kitchen King Masala
Salt to taste
2 Tablespoons Oil
For the Tadka 
2  Tablespoons Oil 
2 Tablespoons Desi Ghee
3 Clove Garlic - lightly mashed - optional
1  Teaspoon Cumin Seeds
1/2  Teaspoon Asafoetida / Hing
2 Dry Red Chillies
1 Teaspoon Kashmiri Red Chilly powder
For Garnishing
2 -3 Tablespoons Fresh Cream
2 -3 Tablespoons Coriander Leaves - chopped

Method
Clean, wash  sabut urad dal by rubbing it with your hands to remove the black water, at least for 5 - 6  times.  Wash the  rajma beans to well.  Then soak  them overnight.

Next morning again rinse it 3 -4 times in running  water. Take the sabut urad dal on to plate and clean it - i.e to remove the dal has not puffed up/  the hard ones.
Cook the dal and rajma together for at least 10 to 15 minutes  in sufficient water ( 4 - 5 Cups) after the whistle on low flame .  When cooker cools on its own, open it and lightly mash it with then back of the spoon or a vegetable  masher, it should be absolutely soft, easy to mash. Add water if  it's too thick.
In a large pot / vessel heat 2 tablespoons oil,  add onions,  ginger, garlic, and saute till golden. Now add  the tomato puree 1/4 cup water and the dry spices - turmeric, chilly, coriander and kitchen king powder and salt to taste, saute these till oil separates.  Add the dal and If its runny, don't worry, the water will evaporate during further cooking.
Put the dal to cook on  very low flame. Stir the dal regularly as urad dal tends to stick very fast at the bottom. Taste for salt and basic flavors.  Let this simmer on low flame for at least 30 to 45 minutes. Keep stirring the dal in between by scraping it till bottom with a spatula. 
Meanwhile, let's prepare Tadka.
Heat oil + ghee in a pan. Add garlic, cook till it becomes a light brown , but stir continuously for even browning.  Add cumin seeds and dry red chillies let it sizzle.
Take off the flame. Add asafoetida  and  chilly powder.
Mix well. 

To Serve
Transfer dal to a serving bowl.
Pour beaten cream.
Then the tadka. Garnish with chopped coriander leaves and serve hot with steamed rice. 
We had the remaining with rotis for our dinner and it tasted even more good!  
Enjoy!!

Mix Veg Clear Soup#SoupSwappers

This is clear soup, it's vegan and gluten free too.  For this soup, have used  all quick cooking vegetables.  These are chopped in the size that would help in cooking fast. The order of adding vegetables is also such, that the ones that take a little longer time, are added in first.


Serves 3 to 4
Ingredients

1 Tablespoon Each Red, Green, Yellow Bell Peppers
Tablespoons Finely Chopped Cauliflower
2 Tablespoons Boiled Sweet Corn
2 Tablespoons Finely Chopped Carrot
1 Spring Onion - finely chopped
1 Small Onion - finely chopped
1/2 Cup Cabbage - finely chopped 
1 Teaspoon Grated Ginger
1 Scallion / Spring Onion - finely chopped  
2 Tablespoons Olive oil
Tablespoon Coriander Leaves - finely chopped
1500 Ml  Water
2-3 Tablespoon Apple Cider Vinegar
Tablespoon Soy sauce
For Serving As per Taste
Chilly Vinegar
Black Pepper powder
Salt to taste
Tomato Ketchup

Method
In a large sauce pan heat the oil, add onion sauté on high for a minute, add grated ginger, when the ginger is fragrant then add carrots. Sauté on medium high for a minute, add cauliflower, reduce the flame to sim, add little salt, just enough for these vegetables, cover and cook for about 2 minutes, as carrots and cauliflower need a little extra time to cook. 
Now add cabbage, spring onion, sweet corn , coloured bell peppers,  apple cider vinegar, soy sauce and water. Just bring it to rolling boil switch off the flame, that 's done. Want to retain the color and the crunch of the vegetables hence one rolling boil, is all I give. 
Serve this in soup bowls, garnished with coriander leaves.  Let each one add the seasoning to their choice and according to taste. 
Eat and drink this soup hot with a spoon, so that you enjoy the flavours and crunch of the veggies.
