Badshahi Chicken Legs - Air Fryer

Although this chicken leg is grilled in the air fryer it is juicy and not dry. That's because I grill it with the marinade, hence the chicken does not dry out. Try this method and you will enjoy a juicy air fryer grilled chicken that is healthy and delicious.

Ingredients 
2 Chicken Legs
½ Teaspoon Salt or to taste
½ Teaspoon White pepper powder
1 Teaspoon Ginger Garlic paste
2 Tablespoons Yogurt
2 Tablespoons Hung Curd
2 Tablespoons Cream
1 Egg white
A Pinch Freshly Grated Nutmeg
1 Tablespoons Corn flour
2 Tablespoons Ghee
Grind To A Fine powder
4 Whole Cashewnuts
1 Green cardamom powder
¼ Teaspoon Shahjeera
Rice for serving 


Method
Prick and marinate chicken with all the given ingredients for at least 2 hours, I kept this over night.
Pre heat the air fryer at 165°F for 3 minutes.

Place the one chicken leg in an Pyrex dish along with half the marinade, in  the air fryer. Cook 20 minutes.
Flip chicken and increase the temperature to  180° cook for 10 more minutes. Check for doness, since it depends on your brand of air fryer. Again flip and keep it for 3 -5 more minutes until that sides gets grilled marks. 

Let it sit in the air fryer for another 2- 3 minutes.
A juicy grilled chicken legs is ready to enjoy.

Vegetarian Thukpa#Soupswappers

For this month event our host Karen  , asked us to make  noodle soup. 
Thukpa is a Tibetan noodle soup which has its origins in eastern part of Tibet . But this soup is mostly made with meat and is popular in Nepal, Bhutan, in Northeast India - states like Sikkim, Assam and Arunachal Pradesh.
When I,  was in Sikkim for a holiday, had this vegetarian as well as the non vegetarian version, on different day's for my dinner, it's so delicious, filling soup , since it's loaded with vegetables.
Ingredients 
1 Packet Noodles
1 Small Onion - finely chopped
2 Medium Tomatoes - finely chopped
1 Carrot - cut into juliennes
½ Cup Shredded Cabbage

4 French Beans - chopped
10 Broccoli Florets or Cauliflower
½ Teaspoon Minced Ginger
2 Cloves Minced Garlic
½ Teaspoon Garam masala
½ Teaspoon Red Chilly powder
750 Ml Vegetable Stock
1 Teaspoon Soy Sauce
1 Tablespoon Oil
Salt to taste
Method

In a pan, heat oil , add the ginger garlic paste, saute  till it just starts of change color, add the onions saute until its turns translucent.  Add the tomatoes, cook  till they soften a little . Add the veggies -  carrots, broccoli florets, shredded cabbage , french beans and saute till for a minute. Add the vegetable stock and salt, bring this to a boil.  Now add garam masala, red chilly powder and soy sauce,  mix well and let it cook  till the veggies are done. 
Taste for salt and adjust the seasonings if required.
Meanwhile cook the noodles separately as per packet instructions.
For serving, place the noodles in a serving bowl and pour the soup on the top.
Serve hot a healthy and a delicious dinner or lunch is ready.
This is a vegan and gluten free soup.  To make it gluten free used rice noodles.

Falafel Layered Salad & A Bhatura Sandwich -A Combo Post#Improv

This an exotic meatless , a complete and delicious meal which is healthy too. Have vegetarian guests then make this super meal which will make them ask for more for sure. Falafel is a Middle Eastern starter but,  is also a favorite street food here in Mumbai.
For the Falafel
Ingredients
1 Cups Dried Chickpeas 

½ Cup Chopped  Coriander Leaves
1 Tablespoon  Chopped Parsley
3 Cloves Garlic - minced
1  Medium Onion - finely chopped
Salt & Black pepper powder to taste

¼ Teaspoon Cayenne pepper
½ Teaspoon  Chopped Green Chilly 
½ Teaspoon Cumin powder
½ Tablespoon Coriander powder
2 Tablespoons Fresh Breadcrumbs
A Pinch Baking soda
Oil for deep frying

Method 

Wash and soak the chickpeas in water and let soak for at least 6 hours. 
 Drain the water and wash them once again.
Transfer the chickpeas to a food processor and chop until you get a fine crumbly texture. Add the coriander, parsley, garlic cloves, onion and green chili and pulse the food processor till well mixed.  Add in salt, peppers, coriander and cumin powder,  breadcrumbs and mix well. Take this out into a big bowl and mix it with you hand well. Keep aside
In the meantime heat the oil for deep frying and set the heat to medium.
Now add in the baking soda to the chickpea mixture and mix it well.  Shape into round balls or ovals using two spoons or a falafel maker.  I made oval and round shape Falafels.
Fry the falafels in it until browned and crispy from outside. Take out on a kitchen paper to drain the excess oil.

For The Tahini Yogurt Sauce
Ingredients
1/2 Cup Fresh Yogurt - beaten
2 Tablespoons  Tahini paste - Homemade
Salt & Black pepper to taste
Chopped Parsely  for  garnishing

1/2 Teaspoon Lemon juice

Method

Mix all the ingredients and make a paste. Your dip/sauce is ready! Chill it in the refrigerator till we get all other ingredients ready.

For the Salad

1 Small Onion - finely chopped 
½ Cup  Finley Shredded Purple Cabbage
½ Cup  Finely Shredded Lettuce Leaves
½ Cup   Grated Carrots
1 Medium Tomato - de seeded & cut into strips
Salt to taste
A drizzle of Lemon Juice
 Method 
For Assembling / Serving  Into Glass Verrines 
Layer the vegetables on top of each other in a clear glass. Season with salt and  black pepper powder. Just a drizzle of lemon juice. Pour a tablespoon of Tahini  Yogurt Sauce on top. 
In a wooden skewer pierce two oval falafels and place it on the glass. 
Serve the cold salad with crispy warm falafels.

For the Yeasted Bhatura Sandwich

Slice the Yeasted Bhatura (but not till the end). Fill it with the salad. Season with salt and  black pepper powder. Just a drizzle of lemon juice.  Add two or three round falafels. Pour a tablespoon of Tahini  Yogurt Sauce on top.
Enjoy!!  These Falafels are a great sensation to the taste buds!!!
You can even serve these with toothpicks and at the side Tahini  Yogurt Sauce as a starter.

Mazedar Chicken Noodle Chaat

This is super fast and easy, delicious and complete meal. Many at times our children want to have instant noodles, we give it to them as per the packet instructions and we say that they are having unhealthy food. 
Try this chaat recipe with noodles, chicken, veggies, fries, curds and you are presenting an interesting, delicious and eye catching bowl of healthy food. This can be had as complete meal too. We had it as our meal instead of the regular roti and sabzi... try this,  kids will enjoy,  ask for it again and again. This is an absolute comforting soul food. 

Serves 2
Ingredients 
2 Small Pack of Instant  Noodles
150 Grams Boneless Chicken - finely cubed
1 Spring Onion - finely chopped
1 Fresh Red or Green Chilly - finely chopped - I used Red
1 Small Onion - cut into small cubes
1/2 Capsicum - cut into small cubes
1 Medium Tomato - seeded and cut into small cubes
1+1 Tablespoon Olive Oil or Vegetable oil - I used Olive Oil
3 Cloves Garlic - finely chopped
1 Tablespoon Heaped Chilly Garlic Sauce
1 Tablespoon Heaped Red Chilly Sauce
One packet of Noodle seasoning - the one that come along in the pack
1 Cup Thick Fresh Curds / Yogurt- beaten
French Fries as required - optional
Chaat Masala as required
Potato Wafers of your choice - I used Tangy Tomato Wafers

Method
Wash the chicken cubes and marinate it the Chilly Garlic Sauce, Red Chilly Sauce and the noodles seasoning, mix well. Keep this aside covered . 

In the meantime lets boil the noodles
In a big sauce pan heat 4 to 5 cups of water, when the water comes to a rolling boil slide in only the noodles (no salt and seasoning to be added and do not break the noodles ). When boiled drain into a strainer, pour cold water over it and loosen the noodles lightly with your fingers. Add a tablespoon of hot oil over the noodles and toss them well till coated. 
Now that are noodles are done, let's chop our veggies separately and keep them a side.

Now lets prepare the Chicken

In a frying pan heat oil, add the garlic, fry till it releases an aroma, for a minute only ( do not brown it ), add marinated chicken, stir fry till done and dry ( no moisture / liquid should be present). Take off flame, add a little of each - onion, capsicum and chilly, stir well keep aside.

Let's assemble our Mazedar Chicken Noodle Chaat

In a bowl place half the noodles
Arrange the french fries to the sides of the bowl
Now spread half of the prepared chicken
On top of it spread half of the curd / yogurt
Sprinkle half of the capsicum, chilly, onion, spring onions and tomato . Sprinkle chaat masala.
Crush few wafers and sprinkle on top , few whole on to the sides  
Ta-da our Mazedar Chicken Noodle Chaat    its ready ..
Looks irrestible .. isn't it !!!  
Pick a fork/spoon, just dig into it.. Enjoy !!

One Pot Veggie Soupma For Two#Soupswappers

Soupma is nothing "But" Upma + Soup, a semolina veggies soup, tasty quick, filling and a one pot soup.
Serves 2 
Ingredients
¼ Cup Fresh Green Peas
1 Small Onion - finely chopped
1 Small Carrot - finely diced
1 Small Tomato - chopped
3 French Beans - chopped
1 Baby Potato - - finely diced - optional
1 Tablespoon Finely Chopped Capsicum
1 Green Chilly - - finely chopped - optional
2 Tablespoons Heaped Semolina
¼ Teaspoon Urad Dal
¼ Teaspoon Mustard Seeds
¼ Teaspoon Turmeric powder
¼ Teaspoon Paprika powder
1 Teaspoon Sugar
Salt to Taste
4 - 5 Curry Leaves - chopped
1 Tablespoon Oil or Ghee
500 Ml Water

Method

In a sauce pan dry roast the semolina till it turns light pink on low flame. Take this out. 
In the same pan heat oil,  add the mustard seeds, urad dal, and when they crackle,  add the curry leaves and onion, saute till translucent , now add all the veggies and saute for a minute, add the turmeric powder, salt , sugar and water,  bring this to a boil, reduce the flame when the veggies are nearly cooked add the roasted semolina and stir well till mixed and lump free, let this cook on low flame till the veggies are soft yet firm. 
Add a dash of paprika and serve hot with a sprinkle of scallion/spring onion greens. 
Enjoy this tasty Soupma. I, served this Soupma with cheeslings.

Tuna In Tomato Salad#FishFriday

For this salad I, used a can of tuna in tomato with oil, I love this, it taste so delicious.  Since it's so flavorful, it requires just no dressing and do not drain it. Use this as it is. 
This salad was my lunch, super healthy and delicious meal. 
For the salad I used, red radish, this has a sharp biting flavor and its juicy, crispy English cucumber, tomato, salad leaves , lettuce leaves, boiled egg and tuna in tomato. Add just a drizzle of lemon juice, a dash of salt and pepper, with a generous drizzle of mayonnaise.

As A Salad Serves 3 Ingredients 
115 Grams Tuna In Tomato
1 Medium English Cucumber - sliced
2 - 3 Red Radish - Sliced
1 Large Tomato - sliced
2 Hard Boiled Eggs - cut into wedges
10 Salad Leaves
1 Cup Torn Lettuce
A Drizzle of Lemon Juice
A Dash of Salt and Pepper powder
Mayonnaise as required

Method

On a salad bowl, arrange the salad leaves, then spread the torn lettuce. Arrange the red radish, then the cucumber and tomato. Place the eggs, sprinkle the tuna in tomato, drizzle the lemon juice, salt . Pipe the mayonnaise and sprinkle a dash of pepper powder. Tuna Salad is ready.
Let me share with you how I, enjoyed this salad, a rustic style. Took a salad leaf , add a little of each rolled it into a wrap and ate it. 
Super yum..yumm..mm. You get the crunchiness of the veggies and the taste of tuna in tomato. A blast of flavors in you mouth.
